"Face to Face" in which the entire English language team talks with Esther Sobrino, whose profession is Iberian Ham Carving. The Iberian Ham is as much a cultural touchstone in Spain as is Don Quixote, the paintings of Francisco de Goya, or Flamenco. Esther Sobrino talks about the distinguishing features of the Iberian pig from which the delicatessen ham is made, about the curing process, which takes up to four years, and about her work carving the hams, a true "labor of love."
